Mix dry ingredients
Beat in 1/2 of dry ingredients into wet ingredients
Beat egg white until stiff, then mix into dough
Mix in the rest of flour mixture
Roll out thin
Cut out cookies and bake 10-13 minutes
Transfer immediately to cooling rack
