An easy way to prepare an Italian classic!
Place one slice of proscuitto on each slice of veal and pound it in by slapping it with the back of your hand. Season with s&p and dredge with flour shaking off any excess. Add a thin coat of oil to large oven-proof skillet and heat until very hot. Add the veal to the skillet, proscuitto side down first, being careful not to crowd the pieces and turn as soon as browned, about one minute. Once browned on both sides, remove to a platter and keep warm. Repeat with additional pieces and adding oil as necessary.
Lower heat to medium, add diced tomatoes and garlic to skillet and cook for one minute. Add wine and reduce by half. Add broth and reduce to sauce consistency. Season to taste and add basil. Return veal pieces to skillet. Top each piece with a slice of tomato and mozzarella.
Place in oven and broil until cheese melts, about 1-2 minutes. Serve immediately!
