Looks complicated but worth it. After the first time it gets easier. Can be made soya free if you substitute the soya milk. You could substitute mushroom ketchup for the soy sauce. Adapted from a recipe in Vegan by Tony Weston & Yvonne Bishop
Mix soy sauce with olive oil. Toss with cubed tofu. Place on baking sheet & bake for 15 minutes at gas mark 5 until a little crispy round the edges.
While tofu is cooking, mix marmite & dairy free spread. Thinly spread this on one side of each slice of bread & place on baking tray.
Heat soya milk gently in a saucepan. Never let it get to boiling point. As soon as it is hot add the vegetable oil & mix well with a hand whisk. Let it heat again while whisking in the vinegar but don't let it boil. Turn it off before it boils and quickly add the potato flour while whisking. Use heat if it needs to thicken. You want it to be the texture of melted cheese (whisk in a little soya milk if too thick). Add mustard, tomato ketchup & stock powder to taste. Mix in the baked tofu cubes.
Share this mixture between the 4 slices of bread, covering the marmite mixture & spreading it to the edge of the bread. Bake in oven at gas mark 6 for 15 mins or until brown on top and toasted at the edges.
The tricky bit is when you add the potato flour. If the milk is boiling, you will get lumpy bits. The milk should only just be steaming a little.
