Easy vegan cookies!!!
Mix oat flour, soda and salt. In separate bowl mix flax and soy milk. Add the sugars, oil and vanilla to flax mixture and whisk until emulsified. Mix wet ingredients into the dry ones and then fold in the chocolate chips. Makes 18 cookies. Drop by spoonfuls onto parchment paper on cookie sheets and cook for about 11 minutes. Cool on sheet for a couple of minutes and then remove and let cool on rack.
