Cook the lentils for 10 - 20 minutes (depends on the kind of lentils you are using, so just cook them until they are nice and soft)Heat up coconut oil in a big sauce pan and add the onions. Saute until they are golden - don't let them burn :)then add in all the spices and stir for 2 minutes.Now add the tomato puree and stir until is combined. Add the coconut milk after a few minutes, stir and let it simmer for 15-20 minutes.Take the saucepan from the heat and mix in the lentils. Then serve over rice and garnish it with cilantro and/or herbs as you'd like.Enjoy your Red Lentil Curry!
