1 - Cook the sweet potatoes
2 - Toast the bread
3 - Wash the spinach and tomatoes
4 - Slice the tomatoes, mango, sweet potatoes and bread (any shape you prefer)
5 - Add everything in a BIG bowl together with the seeds, lemon juice and seasoning
6- Give it a lovely mix and enjoy this sweet and moisty fresh salad.
Add as much fruit or greens you want. It never goes wrong.
Use avocado, papaya, banana or any tropical moisty fruit to replace the mango.
Adding onion/spring onion gives it a spicy flavour.
Nuts are also very welcome :)
