Impossible Burger "meat" and Penzey's spices make for an excellent Italian sausage substitute.
Thoroughly blend all ingredients in a bowl. Form small sausages or small meatballs and fry in a large skillet over medium heat, turning frequently for 6 minutes or until done.
Optional: Freeze meatballs or sausage after forming for 2 hours or more. Then cook for up to 10 minutes or until cooked through.
Small meatballs go great in pasta dishes liked baked Ziti or spaghetti. Sausages sliced or crumbled, are excellent on pizza.
Keeping the meatballs small allows them to fully cook.
I cut back on the Italian Sausage seasoning from 1 Tbsp. to a 1/2 Tbsp. because it was too salty. Adding back 1/2 tablespoon of straight ground fennel fixes the issue.
