Cook the lentils according to package directions. Dice the onion and sautee in a nonstick skillet until translucent. Add all the spices and the garlic and cook 2 minutes until fragrant. Add tomatoes, coconut milk and mixed vegetables. Simmer 15-20 minutes then stir in lentils.
