Cream sugar, Earth Balance and vanilla together.
Prepare the Ener-G Egg by following the package instructions (11/2 tsp of powder whisked with 2 Tbs of hot water until foamy.) Add to the sugar mixture. Whip or whisk until light and fluffy.
Whisk the dry ingredients together. Add 2/3 of dry ingredient mixture to whipped mixture and whip until combined. Add the remaining dry and mix by hand until just combined.
Cover dough with plastic wrap and refrigerate for about an hour.
Preheat oven to 375 degrees. Mix sugar and apple pie spice until mixed and medium brown. (Use your eyes and nose on this one - spice that sugar as much or as little as you see fit. For the batch pictured, I'd say we used a tablespoon of spice to the 1/4 cup of sugar.)
When the dough is chilled, scoop 2Tbs of dough and roll into balls. Roll balls in sugar + spice.
Use a fork to mash balls into cookie shapes.
*IF YOU WANT FAT CHEWY COOKIES:
Put the cookie sheet into the fridge for about 15 minutes to let the dough firm up. The cooler dough will hold its shape longer in the oven and not give it a chance to spread, resulting in fat puffy chewy cookies. Remove from fridge and put directly into oven. Bake for 10 minutes.
*IF YOU WANT THIN CRISPY COOKIES
Let the cookie sheet sit on the stove or in the warm kitchen for about 5 minutes. Your activity with the dough has warmed it up already, but the warmer the dough is the more it'll spread out in the oven, making thin crispy cookies.
Remove from oven and let sit for 30 seconds. Gently move cookies to wire rack for cooling (BE CAREFUL. They're very soft right now, but will firm up fast!)
Proceed to eat those bad boys.
