1. Place olive oil in large, flat pan, and heat to medium. Add onions and sauté until translucent, about 5 minutes.
2. Place onions in a large slow-cooker (at least 7 quarts). Cover with tomato juice and chicken broth.
3. Place filet mignon pieces into the warm pan used to cook the onions. Brown meat well on all sides. Add to slow cooker.
4. Add remaining ingredients. Stir occasionally, and add water to keep all ingredients covered as needed. Cook for 8 hours on low heat.
