Any green vegetables and strong cheese - no sauce - use up left-overs including cold meats but ensure that the leeks and cauliflower are main to give good soft mix.
Clean and slice up leeks into thick strips as courgettes
Remove some of the outer skin of courgettes and cut into thinnish strips lengthways down vegetable.
Break cauliflower into several florets
Cut any potatoes if used into small pieces.
Place the above into a steamer for 15 mins to cook just to softness.
Cut up any ham being used. Crispy bacon pieces are a nice alternative.
Cut up blue cheese into smallpieces. I also use Feta it goes well with the blue cheese and melts readily as well.
Use some of the butter to stire over the potatoes first in a large bowl. Then add all rest of vegetables. Put in the butter, cheeses and ham and stir quickly.
S&P to taste
Serve at once.
I used up a very soft advocado and served it separately but would easily go into dish if still firm..
Works with any vegetables. Especialy those left at the bottom of bag and need to be cooked asap.
If you have time, cook the courgettes on a griddle instead. Serve very soft advocado separately as side dish.
