This recipe is a ton of work and very delicious.
Preheat oven to 375 degrees.
Combine squash, milk, broth and garlic in a medium sauce pan; bring to a boil. Reduce heat to medium simmer until squash is tender about 20 minutes. Remove from heat. Add salt, pepper, and nutmeg. Using an immersion blender, blend squash mixture until smooth. Add gruyere, and 5 ounces of mozzarella cheese, stir until smooth.
Heat oil in large skillet of medium heat, add onion and mushrooms to pan, cook 7 minutes or until browned and liquid evaporates. Add chard 1 tablespoon broth, cover and cook until chard wilts, about 5 minutes. Remove cover and simmer until liquid evaporates.
Spread 1/2 cup squash on the bottom of an oven-safe 11 x 7 inch glass or ceramic baking dish coated with cooking spray. Arrange 3 noodles over sauce; top with half of chard mixture. Dollop ricotta cheese on top of chard. Spread half of remaining sauce over top. Arrange 3 noodles over sauce. Top with remaining chard mixture; top with remaining sauce. Sprinkle remaining 5 ounces of mozzarella and Parmesan. Cover with foil coated with cooking spray. Bake at 375 for 35 minutes, uncover and bake and additional 10 minutes until bubbly and brown.
Remove from oven and let cool 10 minutes before serving.
