It was first presented at a cooking demonstration hosted by Green Building Supply on Thursday, May 9, 2013.
This recipe was presented at Green Building Supply 6/6/2013 in two or three different combinations.
One with the quick method and then again with a more complex method.
Chop the vegetables into bite sized pieces. If using hard roots like yam, cut smaller than the rest.
Heat the pan with oil and sauté the herbs and pepper.
Add the vegetables and turn the heat up to medium high the sauté while stirring.
Add water, cover, and cook for 6 minutes. Turn the heat off and the vegetables will finish cooking.
Adjust the time for intense water frying to your taste.
Check a couple of times during your first try on your stove to make sure you do not burn the vegetables. You may need to increase the water.
Crack the lid and let the final steam out.
Your goal is to get the veges to be cooked and dry for serving.
If there is still water in the bottom of your pan, add it to one of your other dishes or serve it in a heat proof glass or cup as a wonderful broth.
Variation of More Complex Method
Heat the oil and sauté the slices of ginger and turmeric until like overcooked potato chips.
Remove.
Add curry leaves and the other spices.
Be ready to add the veges and water soon. You don't want to burn the spices.
