1. Pre-heat oven at 180C.
2. Prep veggies, cauliflower separate into similar chunks as broccoli and slice carrots on the diagonal about 4mm in size and onions cut into 8 wedges. Mix together in baking dish.
3. Cover with minced garlic and oil
4. Roast for approx. 40 mins until tender. Stir around about ½ way though so you get an even browning on veggies.
5. Serve with grated cheese.
Notes: Macros are based mainly based on oil and cheese. Veggies change based upon what I have in fridge to cook. Be imaginative on veggies use any that cooks about the same time! If you are cutting calories use spray oil.
