A savory vegetable pot pie recipe that is quick and easy to make. A recipe composed of simple ingredients that the entire family will enjoy!
Preheat over to 375.
Combine all ingredients (sans biscuits) and mix thoroughly.
Separate biscuits and individually flatten each to about 5-6" circles.
Place biscuits into a greased cupcake pan.
Fill each biscuit cup with about 1/2 cup of veggie mixture.
Fold sides of biscuit over top to cover the veggie mixture.
Cook for about 20 minutes, making sure biscuits are golden brown.
Let pies cool in pan for 1 minute.
Enjoy!!!
These pot pies freeze well!!! I would suggest reheating them in the oven. May get soggy if microwaved!
