Vegetable Quesadillas
1. Dice all vegetables, grate cheese, get spice mix ready
2. Heat oil in large skillet over medium heat. Add onions, green, red peppers and cook until they begin to brown, around 3-5 minutes.
3. Add garlic and cook for 1 minute more. Add cumin, chili powder, oregano and stir. Add spinach, salt, pepper and cook until spinach has wilted, around 2 minutes.
4. Lay tortilla on a flat work surface. Sprinkle with 1/4 cup cheese, spoon 1/4 of veg mixture, then cover with another 1/4 cup cheese. Fold tortilla in half and heat a non-fat skillet to medium heat.
5. Cook quesadilla for 2 minutes until lightly browned and cheese has melted.
6. Slice into 6 pieces bad garnish with green onion, sour cream and salsa
