I just spray muffin tins but can use muffin pan with foil baking Cups Spray with cooking spray
Combine the eggs, milk, cheese, peppers, onions and spinach in a bowl. Mix well.
Divide evenly among the muffin Cups
Bake at 350 F for 20 minutes, until a knife inserted in the centre comes out clean
Can be frozen and reheated in the microwave. Any combinations of vegetables and cheese may be used
