Saute onions and garlic in olive oil until lightly golden. Stir in beef broth, carrots, celery and potatoes, or any other hard vegetables you've added. Add celery seed and thyme, simmer for half an hour , or until vegies are tender.
Stir in pureed tomatoes, peas, corn, lima and green beans.
If you are using regular barley, cook as directed and add at this time.
simmer for another 15-30 minutes.
Serve with grated parmesan cheese
Any type of vegie can be substituted in this basic recipe, and salt and pepper to taste.
