Heat olive oil in wok.
Add garlic and cook until it begins to brown.
Add vegetables to a bowl and coat with corn starch and ginger.
Add remaining ingredients to bowl and mix.
Add vegetable mix to wok and cook until vegetables are soft and tender.
Spoon Stir fry over egg noodles.
