Suggest a better description1.Sauté onion in 1 Tb hot oil until soft.
2.Add garlic and sauté another minute.
3.Spread onto the bottom of a greased baking dish.
4.Slice zucchini, squash and tomatoes into ¼” slices.
5.Layer slices tightly into a spiral in your baking dish.
6.Sprinkle with salt, pepper and Thyme.
7.Drizzle the rest of the oil over the top.
8.Cover with foil and bake for 25 minutes at 375 degrees
9.Remove from oven, uncover and sprinkle with Parmesan and bake an additional 25-30 minutes or until potatoes are fork tender. Enjoy!
