If there's one thing to make time for, it's caramelizing onions for the week. It's just so nice to reach into the fridge and pull out a container of carmelized onions to flavor scrambled eggs, cheese toast, hamburgers. Because it takes a lot of onions to get a decent-size container full, start with 4 big sweet onions cooked in 2 12" skillets.

Heat oil over low heat in skillets.
A few minutes before adding onions, increase heat to medium-high. Add onions and cook, stirring often, until they are dramatically reduced and light caramel brown , about 10 minutes.
Reduce heat to medium-low and continue to cook the onions, stirring frequently, until they are rich caramel in color, 20 to 30 minutes longer.
(Can be cooled to room temperature, then refrigerated in a covered container for several weeks.)
