Avocado and cucumber, together at last. This easy sandwich is a great hot-day lunch - cool and refreshing, yet quite filling for a vegetarian sandwich. Between the avocado and the cheese, this is not a diet food!

But edited for additional cheesy goodness. And to remove certain heresies like mushing up a perfectly good avocado for any reason other than guacamole. And the salt goes on the AVOCADO. Not the cucumber. The avocado. Okay, I'm a picky eater. Everyone who reads this now knows this. Moving on.
Toast the slices of whole grain bread on both sides to desired crispness (or as close as you're willing to get if it's too hot to use the toaster for long). Spread one side of each slice of bread with the cream cheese.
Top the cream cheese on one side with avocado, and sprinkle the avocado with salt and/or pepper if desired. Place the jack cheese atop the avocado, then layer on the cucumbers. Top with the other slice of bread (cream cheese down, of course!) and press gently together.
I tried this with some fresh baby spinach added, but that just detracted from the delicious pairing of the rich avocado and crunchy cucumber. No more. From now on, I am a purist.
If I want more deliciousness per sandwich, I might try layering avocado, cucumber, cheese, avocado, cucumber.
