Suggest a better descriptionSteam spinach. Set aside to cool.
Cook onion and garlic until soft. Add pasta sauce and lentils and mix.
Finely chop steamed spinach. Add cottage cheese and stir through. Stuff the spinach and cottage cheese mix into the cannelloni tubes.
Line baking container with 1/2 lentil sauce. Lay cannelloni tubes on top, then cover with remaining lentil sauce. Gently heat cream cheese in microwave to make it slightly more liquid (I sometimes add a very small amount of milk to help this). It should be the consistency of thick icing. Top the cannelloni with cream cheese, then cover with Parmesan cheese.
Bake at 170 for around 45 mins, or until the cannelloni is soft and the cheese on top slightly browned.
