Veggie & black bean chili
1) In a dutch oven, heat onion, red pepper, salt & pepper for 3-4 minutes
2) Add in garlic
3) Add in spices, diced tomatoes, tomato paste, and water. Stir to combine and bring to a boil over medium-high heat.
4) Add in lentils and reduce to medium low to simmer, uncovered, for 15 minutes or until lentils are tender. Add more water if needed.
5) Add in black beans and corn. Cover and simmer for 20-25 minutes
6) Optional add: Shredded cheese and sour cream
Makes 6 servings at 235 Calories per serving
