Suggest a better description1. Heat olive oil in a large stockpot over medium heat. Add the onions, peppers, and tricolor blend. Cook and stir until they are soft and onions are translucent. Add the garlic and cook 1 minute.
2. Add all other ingredients except the lime juice and shredded cheese. Reduce heat to medium-low, cover, and simmer for 45 minutes.
3. Add lime juice and shredded cheese individually.
