enchilada casserole
For the sauce:
1) Add the following to a blender: crushed tomatoes, 1 cup diced onion, garlic, chipotle, chili powder, oregano, cumin and cinammon.
2) Blend until smooth
OR
1) Just buy a can or two of enchilada sauce
Pre-heat oven to 425.
Assemble the enchiladas:
1) Mix together: 1 cup diced onion, butternut, corn, zucchini and black beans (add cilantro?)
2) Spread a 1/2 cup enchilada sauce in the bottom of a 9x13 baking dish
3) Add one layer of tortillas
4) Add one layer of veggies, cheese and sauce
5) Add one layer of tortillas
6) Add one layer of veggies, cheese and sauce - should have 1 cup or so of cheese reserved for later step
Bake:
1) Cover the baking dish with foil
2) Bake for 10 minutes
3) Remove the foil and spread remaining cheese on top
4) Return to the oven without foil and bake 15 - 20 minutes....until cheese is melted and edges beginning to brown.
Let casserole rest for a few minutes before serving.
Top and garnish with sour cream and/or cojita and/or cilantro and/or sliced radish
Green enchilada sauce option.
Blend the following: 22 oz canned whole tomatillos, 1 cup diced onion, 3/4 cup cilantro, 2 garlic cloves, 1 serrano or jalapeno chile chopped (optional...or use less), 2 tblsp lime juice and 1 1/2 tsp ground cumin.
Added garnish: sliced radish, salsa, jalapeno
Try mixing cilantro into veggies during assembly.
