In stock pot, Saute Garlic and Onions in Olive Oil (on med/low) until tender
Add Sweet Potato chunks, spices, juice of the lime, some lime zest, 1/2 cup water.
Cook 15 mins, stir every couple mins, add some water or olive oil if too thick or sticking.
Add Tomatoes, black beans, green chili, chipotle chilis.
Cook until sweet potatoes are tender, add water if needed.
Simmer another 10 mins.
Add cilantro on top at serving
De-seed the canned Chipotle peppers to mellow it down, but in the can with the Adobo sauce, it's a little messy.
