Put the hashbrowns in the bottom of a 9x13 pan. Cut up the veggies and saute them in the butter for a few minutes. Pour those on top of hashbrowns. Put cheese on top of veggies or on top of egg mixture. Mix the eggs and milk until combined. Salt and pepper the eggs. Pour on top of other ingredients. Cook at 350 for 30 to 40 minutes. You can cook it with aluminum foil on top until the last 10 minutes, or you can leave that off.
