“Plant Based” just got DE-LISH with Bret’s Veggie Bowl recipe. You can take any and all veggies you have on hand (yep, use them all up so there’s no waste) and use them here to customize your own bowl. Be sure you’re buying organic vegetable patties that are soy-free.

Heat oil in large skillet over medium heat. Add crumbled veggie patty and cook for 2 minutes.
Add the peppers, asparagus and zucchini, and spices. Sauté for about 8 minutes, or until vegetables are tender. Add spinach to a bowl and top with cooked veggie mixture.
Top with additional veggies or avocado, if desired.
