This is an icelandic cake for every season. Advance to make. You cut into small squares. Beautiful and you see about 6 layers of cookie crust and prunes inbetween. A family favorite.
Cream buttter and sugar, then add eggs one at a time, beating hard. Add a little of the flour and b. pwd to the first mixture. Add flavoring and cream, and work in as much flour as possible. Turn out on board and knead in the rest of the flour.
Divide the dough into 5 equal parts and roll out to fit into 9 inch layer cake pans.
Bake at 350F until delicate brown. When cool, put together with prune filling, then wrap in plastic and allow to ripen for a day or two before slicing.
Filling:
Cook prunes according to directions on pkg. Stone and put through chopper. Add other things and bring to a boil and cook until thick. Remove from heat and add vanilla.
Layer cake.
