Melt butter in large pot over medium heat. Stir in onion & garlic & saute 3-4 minutes. Stire in brown sugar & saute for 2-3 more minutes. Then stir in red wine, vinegar, tomato paste, chikcn stock, cumin, cayenne pepper, chili powder, cilantro & salt to taste. Simmer for 30-35 minutes or until mixture is reduced by about half.
Meanwhile heat oil in large skillet over medium high heat. Stir in bawcon & fry for 3-4 minutes or until bacon is browned. Move bacon to one side of skillet & add venison to the empty side of skillet. Season meat with salt to taste & saute meat for 15 minutes or until well browned. Stir in the beans & toss all together. Transfer this mixture to the simmering pot.
Mix everything together thoorughly & let simmer for about 20 more minutes.
