Melt butter in sauce pan, then gradually stir in flour, making a smooth paste. Cook about 5 minutes while heating milk and cream. Stir in hot liquid. When mixture is creamy, add cheese and cook over low heat just until cheese is melted. Season to taste, and garnish, if desired, with crumbled bacon or chopped egg.
