Suggest a better description1) Heat oven to 375 degrees F
2) In a mixer combine the sugar and the next 9 ingredients (through zest) and mix on low. Increase speed to medium for 1 minute. Stir in the blueberries by hand
3) Use a medium ice cream/cookie scoop and drop dough on a greased cookie sheet or divide dough into two pieces and form into balls. Place one dough ball on a flat surface. Use a rolling pin to flatten dough into a thick, round disk. Cut dough into 8 mini triangles (like pie or pizza slices).Repeat with remaining dough ball.
4) Grease baking sheet or line with nonstick parchment paper or aluminum foil. Place about 6 to 8 scones on prepared baking sheet. Sprinkle with raw sugar or brush with additional rice milk.
5) Bake for 25 to 30 minutes or until bottoms are golden and centers feel firm to the touch. Let sit on baking sheet for 1 minute. Remove to a flat surface to cool. These are best served warm.
