Light, fluffy sponge. Can vary the fillings between different jams or jelly. Lightly dust with icing sugar. Perfect at any time and light enough to consume after lunch or dinner without feeling to heavy.
Pre heat oven to 375 or gas mark 5.
Grease with margarine two 7 inch tins.
Cream the margarine and sugar until light and fluffy with a fork.
Add on whole egg .
Sieve the flour and then add 1 teaspoon of flour, beat, repeat with other egg and remainder of flour.
Beat until all the mixture is smooth.
Add pinch of salt.
Divide the mixture between evenly between the two baking tins.
Bake for about 20- 30 minutes until firm to touch.
Place cake on wire rack to cool.
When cook turn over and spread desired filling on each cake and place together.
Sprinkle Icing sugar.
