Slice the onions using the thin setting on a mandolin slicer. In a large skillet or pan heat butter over medium heat add sliced onions and cook for 5 to 7 minutes or until tender, stirring frequently with a wooden spoon or heatproof spatula. If desired, cook a little longer until edges just start to brown, keep an eye on the heat. If the heat is too high, the onions can burn.
Set aside to cool.
While the onions cool shred the Jarlsberg and Asiago cheeses.
In a large bowl add the 2 cups of mayonnaise, cooled chopped onions, and shredded cheeses, mix well, spread into an 8 X 8 glass pan or 9 1/2 X 7 1/2 casserole dish, bake at 350 for 30 to 35 min or till edges are golden brown, rest for 10 min before serving.
Before serving take a spatula and carefully pull the cheese away from the edge tip dish so the grease puddles and using a paper towel carefully soak up the excess grease.
Serve with crackers or baguette.

Can prepare ingredients day before, cover and refrigerate. Remove from refrigerator, bring to room temperature and bake.
