These are the crispy fried super tasty vietnamese rolls. Serve wrapped in lettuce and dipped in Nuoc Cham. You can use whatever type of ground meat you want.
Mix all the ingredients. Take the rice paper and dip in water to make pliable. Fill each and wrap tightly. In a pan, warm oil until slightly smoking. Use enough oil to come half way up the sides of your rolls. Cook in oil, turning occasionally with tongs, until browned on all sides. Drain and cool.
If you've never worked with black fungus, it rehydrates to a very large size. Just a pinch or two of the dried fungus will probably give you 1/2 a cup.
