Cook the noodles according to package directions. Rinse under cold water and set aside. Cut veggies and make dressing by combining rice vinegar, citrus juice, sesame and olive oil and soy sauce in a jar and shaking. To serve, pile a large mound of noodles in the centre of each plate. Arrange lettuce, veggies, herbs around the pile while leaving a good amount of noodles exposed. Drizzle the dressing on both the noodles and lightly around the veggies and herbs, then sprinkle the peanuts over top. Serve with lime wedges.
