Preheat the oven to 190C. Heat oil in a pan, add mushrooms and season. Cook until tender - around 4-5 minutes - then combine with the spring onion, chilli and ginger. Place the sea bass in a small, ovenproof dish and add the mushroom mixture. Mix oyster sauce, lime juice, soy and fish sauces. Pour over the fish, season and cook uncovered for 10-15 minutes. Serve scattered with fresh herbs.
