Boil the potatoes in the skin until cooked. When they are cool, peel and cut into fine slices
Chop the onions very small. Use a food processor to slice or chop them finely
Cut the bacon into small lardons and cook in a dry frying pan until the fat renders and the bacon becomes cruncy. Keep the fat. Deglaze the pan with white wine and keep the juices
Cut the chives into fine pieces
Cut the cornichons into small slices
Slice the eggs into small pieces. I use an egg slicer and cut the eggs both ways, so they are even and finely chopped
In a large bowl mix the yoghurt, mayo, lemon juice, juices from the bacon (fat & deglazed liquor), onions, cornichons & egg until well mixed
Add the potato and start to taste. You will now add the cornichons liquid. You are looking for a sharp tang t the dressing, the acidity of the cornichon liquid should balance the startch of the potatoes. You also want a dresing that is not too 'sticky' this is a taste & trial excercise until you get the taste ou want. The egg adds creaminess to the dressing, the bacon fabulous taste and the balance of the acidity makes it special.
Chill and serve with the chopped chives
YOu will need to add seasoning to your taste and check the consistency of the dressing once the potatoes are in. Depending on how starchy theya re will determine how much dressing they soak up! So you may not need all of the cornichons liquid, and you may need more lemon juice!
