1. Preheat oven to 375 F.
2. Heat olive oil in large Dutch oven over medium heat. Add the onions and cook for about 5 minutes until translucent.
3. Add the garlic, crushed red pepper and oregano (if using), and cook 1-2 minutes more.
4. Add the vodka and cook until reduced by half and alcohol has cooked off.
5. Crush the tomatoes with your hand as adding to the pan (careful, this can be messy: wear an apron).
6. Add salt and pepper (about 2 teaspoons salt). Cover pan with tight fitting lid or foil, and place in oven for 1 1/2 hours.
7. Remove from oven, cool slightly and blend with an immersion blender.
8. Reheat sauce, add heavy cream and stir to mix. Can add fresh basil and oregano, and salt and pepper to taste.
