A take on the Waldorf Salad but modernized and less fattening.
Add the cubed chicken, chopped celery and honey crisp apples, scallions, cilantro, almonds and dried cranberries to a mixing bowl. Add in the mayonnaise, salt and pepper and mix well. Chop up romaine and red leaf lettuce in a bowl with sliced English cucumber. Splash on peach balsamic vinegar and spray on olive oil. Toss well. Add a scoop of the chicken salad to the green salad that is in a salad bowl. Enjoy!
