Prepare walnuts. Sift flour with baking powder.
Grease 9” cake pan with 1 T of the butter
Thoroughly beat together the remaining butter and the sugar. Beat in until blended the egg, rum and lemon rind.
With a spoon stir in the walnuts a little at a time, mixing well. Gradually stir in flour, mixing thoroughly. Turn into prepared pan leveling top with small spatula.
Bake on rack below center in preheated 350 degree oven, testing around 40 minutes with wooden toothpick coming out clean. Cake will be well-browned. Place cake on wire rack for 10 minutes. Loosen edges and turn out on another rack, turning right side up and cool completely.
Store overnight in tightly closed plastic bag to improve flavor.
