Break lettuce into 2"/5cm pieces and combine with fennel, cherry tomatoes and olives. Prepare dressing by combining red wine vinegar with olive oil, salt and pepper. When ready to serve, combine dressing with salad in a large flat serving dish. Place chicken on top. Sprinkle with basil. Serve chicken hot or at room temperature. NOTES : This salad is meant to be served with the Warm Breaded Chicken, but is also delicious served on its own. Makes 6 to 8 servings
