In screw top jar combine oil shallots, vinegar, mustards and salt. Cover and shake well. In large bowl combine greens and bacon. Add dressing and toss.
Broil bread slices 4 inches from heat for 2-3 min till cheese bubbling and lightly browned. Place one on each salad. Top with pepper. Serve at once.
