Great main-course salad. Change the veggies according to what's in season.
1. Cook pasta according to package directions.
2. Flake the smoked trout into bite-sized pieces with a fork into a small bowl and set aside. Add sliced radishes to the trout.
3. Add pasta to the pot of boiling water and cook according to package directions until al dente.
4. While the pasta cooks, steam the asparagus for 3-4 minutes in a steamer placed over the top of the pasta pot. The asparagus should still have a little crunch. Remove the steamer and run the asparagus under cold water to arrest the cooking process, then set aside.
5. Add the crème fraiche, olive oil and lemon juice to a small bowl. Stir vigorously to combine. Add a little sea salt and a generous amount of freshly cracked pepper. Stir again, then set aside.
6. Arrange the spinach leaves in a large bowl. Once the pasta is cooked, drain it and add to the bowl on top of the spinach leaves and stir. The spinach will wilt slightly.
7. Add the asparagus, radishes, trout and dill. Pour two-thirds of the dressing over the salad. Toss well to combine and then add as much of the remaining dressing as you desire. Serve.
Testers notes: Add succinic and summer squash in place of the asparagus and radishes. Choose two complementary fresh vegetables and make your own combinations.
