A hearty salad featuring, spinach and bacon.
1 Hour Before:

Heat 2 tbsp of oil over medium-high heat. Add mushrooms and saute until browned lightly (5-6 minutes). Transfer to a bowl.
Add 4 tbsp of oil, lemon juice, garlic, thyme, red pepper flakes, salt and pepper to mushrooms. Toss to coat. Let marinate for at least 1 hour.
How to Hard boil the Eggs:

Place eggs in saucepan and fill with water until covered by 1in. Bring to boil over high heat. Remove pan from heat immediately, cover, and let stand for 15 minutes. Transfer eggs to a bowl of ice water and let cool. Peel and coarsely chop the eggs.
Making the Salad:

Put the spinach in a large bowl. In a large frying pan over medium heat fry the bacon, stirring occasionally, until crisp and brown (7 minutes). Remove from heat, transfer bacon to paper towels, and drain pan until only 2 tbsp of fat remains in pan.
Use whisk to mix vinegar, mustard, salt, and pepper with bacon fat in the pan. Mix in 2 tbsp of oil. Pour over spinach and toss to coat.
Place spinach on plates and top with onion, tomatoes, marinated mushrooms, chopped eggs, bacon, and serve.
