Adapted from a recipe from Nigella Lawson, this is a refreshing and tasty summer salad that hits the spot on a warm day.
1. Whisk together the lime juice and evoo to combine
2. Gently toss the dressing with the remaining ingredients, taking care not to break up the delicate watermelon cubes.
3. Serve and enjoy!
Note: This recipe is also good left over, but allow the salad to come back to near room temperature before serving to allow the olive oil in the dressing to come back to life.
