Note from original author: Here's a culinary combo you might not have tried. The contrasting flavors of watermelon & blue cheese create a delightful taste experience.
1. Place the watermelon pieces in a large bowl & crumble the blue cheese over the watermelon.
2. In a bowl, combine the shallot & champagne vinegar. Let the mixture stand for 10 minutes.
3. Whisk the oil & thyme into the shallot mixture until well blended. Season to taste with salt & pepper.
4. Drizzle the dressing mixture over the watermelon & blue cheese.
5. Sprinkle that with the roasted pine nuts & serve immediately.
