Cut watermelon into small cubes removing seeds if possible. Put in bowl. Add coriander, mint. , rocket and finely sliced radishes.
In another bowl put ginger, chilli, soy sauce, olive oil, sesame oil. Add enough lime juice to cut the oil. Season dressing to taste.
Place peanuts in a frying pan to warm through. Roughly pound up using a mortar or rolling pin.
Dress salad and sprinkle over peanuts and crumbled feta.
