Good for summer.
1. Marinate the onions in the lemon juice overnight, refrigerated.
2. Toast the cheese under the broiler until brown, then cool and shred.
3. Combine the marinated onions with the cheese and the remaining ingredients. Mix gently, but completely and serve immediately.
